The basic Chantilly is made of whipped cream and sugar although there are slight variations in some countries. The most important thing to get the correct result is the ratio between the two ingredients. The ideal portions are 60 grams of sugar for every 200 millilitres of whipped cream.
To make Chantilly you need to whip the cream for about 4 minutes before adding the sugar. If the sugar is added right in the beginning it will prevent the cream from growing. After whipping the cream, add the sugar and whip some more. It's a fairly simple process.
Also you can add a touch o vainilla, it is used to serve it with fruits or in pastry

1 1/2 cups cream

Sift together cocoa and confectioners' sugar. Mix into 1/4 cup of the cream, stirring until cocoa is completely dissolved. In a cold bowl and using cold beaters, whip remaining cream on high speed to stiff peaks while slowly pouring in the cocoa mixture and vanilla extract. The mixture will have medium-stiff peaks. Store covered with plastic wrap in the refrigerator until ready for use, up to 24 hours.
Yields 3 cups. CHANTILLY CREAM:
Makes about 2 cups.

1 tsp. Grand Marnier
1/4 c. sugar
2 tbsp. dairy sour cream
Refrigerate a medium-size bowl and beaters until very cold. Combine cream, vanilla, brandy and Grand Marnier in the bowl and beat with electric mixer on medium speed 1 minute. Add the sugar and sour cream and beat on medium just until soft peaks form, about 3 minutes. DO NOT OVERBEAT. (Overbeating will make the cream grainy, which is the first step leading to butter. Once grainy you can't return it to its former consistency, but if this ever happens, enjoy it on toast!) you buy it flowers, romance it, give it a backrub, then go straight for the g-
