i have tryed to make a good pizza dough but it always is no good , any ideas on how to make a good one ?

Answers:
I'm Italian and have been making pizza dough by hand since I was nine. I have an electric mixer with a dough hook--it's a lot harder to mix by hand.

To make two pizzas:
Preheat the oven to the LOWEST setting (usually 170 or 175). As soon as it clicks that it's warmed up, turn it off.
*1 cup warm water. Not hot, not cold. Stick your finger in if you have to. 110-115 degrees if you've got a thermometer Put that in the mixing bowl.
*1 packet yeast or 2 1/4 teaspoons bulk yeast. Even if you don't have a bread machine you can use bread machine yeast--it's all the same. Add to the warm water. Start mixing.
*1 teaspoon salt. Add to the yeast/water.
*1 tablespoon extra-virgin (green) olive oil (add to yeast/water)
*OPTIONAL: add a teaspoon or so each of: garlic powder, oregano and/or onion powder to the water also
*flour (amount varies--several cups)
*Olive oil spray
When the water mixture is well-mixed, start adding flour 1/4 cup at a time. Let each scoop mix completely before adding more. You want the dough to get to the point where it's a ball on the dough hook and the sides of the bowl are clean. It might still be stuck at the bottom.
Let the mixer go for about five minutes once it reaches this state. It will make the dough smoother and easier to roll out.
It should be easy to extract the dough hook from the ball of dough. Spray the ball lightly with olive oil spray and put the bowl into the warmed oven.
Immediately wash or soak the dough hook. If the dough dries up on there, it's terrible to clean.
Set a timer for about 20 minutes (not the timer on your oven if that makes the oven turn back on--I got a new oven and ruined a lot of dough before I figured that out!). When it goes off, punch the dough down. Set the timer for 25 more minutes and start getting your toppings together.
When the timer goes off, take out the dough and pre-heat the oven to 450. Split the dough in half. You can roll out with a roller or stretch with your hands--personal choice. I like the roller, my husband uses his hands. Use enough flour so the dough doesn't stick to the counter, but not too much. Roll the dough to slightly larger than the pan. Spray the pizza pans with olive oil spray. Put the rolled out dough inside and roll up the extra to make the crust. Spray the whole thing, especially the crust, with olive oil.
Then add your sauce, spices, cheese, and other toppings.
Cook for about 15 minutes at 450. The cheese should be melted all through and just on the edge of browning.
Wash or soak the bowl immediately.

You should be able to say "I want a pizza" and in slightly over an hour be eating it.
If you want to increase the recipe, you do it with the water and the yeast. To make three, it's 1 1/2 cups water and 3 1/4 teaspoons yeast. Don't make more than 4 pizzas worth in one bowl--it will overflow and make a mess in the oven.
