INGREDIENTS:

2 1/4 cups half-and-half cream

2 tablespoons butter, melted
1/2 teaspoon ground cinnamon
DIRECTIONS:
Mix cornstarch and sugar. Add 4 tablespoons butter and half and half. Cook, stirring constantly, until thick and creamy. Add vanilla.
Preheat oven broiler to high.
Pour mixture into pie crust. Drizzle 2 tablespoons butter over top and sprinkle with cinnamon. Put under broiler until butter bubbles--watch it carefully as it doesn't take long. Refrigerate.

1 cup sugar, divided

2 1/2 cups half and half
4 tablespoons cornstarch
1 teaspoon vanilla
yellow food coloring, a drop or two for color
1/2 cup butter
freshly grated nutmeg
Mix 3/4 cup sugar, half-and-half, and salt in saucepan. Cook to boiling point. Mix remaining sugar and cornstarch in another pan. Add boiling mixture gradually to cornstarch mixture, stirring constantly.Add vanilla, food coloring, and butter; return to heat. Cook, stirring constantly until thick. Pour into pie shell and sprinkle with nutmeg. Bake at 325° for 20 minutes or until firm and lightly browned.
Serves 6 to 8.

Bake in preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake an additional 40 minutes.
