INGREDIENTS:

* 1 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 cup white sugar
* 2 eggs, beaten
* 1/4 cup butter, melted
* 3 bananas, mashed

DIRECTIONS:

1. Grease and flour two 7x3 inch loaf pans. Preheat oven to 350 degrees F (175 degrees C).
2. In one bowl, whisk together flour, soda, salt, and sugar. Mix in slightly beaten eggs, melted butter, and mashed bananas. Stir in nuts if desired. Pour into prepared pans.
3. Bake at 350 degrees F (175 degrees C) for 1 hour, or until a wooden toothpick inserted in the center comes out clean.

you can google the recipies, but here are some additions:

Throw in a handful of chocolate chips

you can substitute apple sauce for the butter to reduce calories

Nestle has peanut-butter chocolate chips (mmmmmmm, peanut butter and bananas!)


BANANA BREAD

2 eggs
2 bananas
1 1/2 pkgs. sweetener
2/3 c. dry skim milk
4 slices of bread
1 tsp. vanilla extract
1 tbsp. water
1 tsp. baking soda

Bowl #1: Separate eggs, saving whites for later.
Bowl #2: After crumbling bread in blender, place in this bowl with the dry ingredients.

Bowl #3: Mash bananas.

Bowl #4: Beat egg yolks, and add vanilla and water.

Add yolk mix to mashed bananas; then add dry ingredients from bowl #2. Mix well. Beat egg whites until stiff. Fold into above mixture. Place into non-stick loaf pan and bake for 35 minutes at 350.

Makes 6 servings. Creamy Banana Bread

INGREDIENTS:
1/2 cup margarine, softened
1 (8 ounce) package cream cheese, softened
1 1/4 cups white sugar
2 eggs
1 cup mashed bananas
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup chopped pecans
2 tablespoons brown sugar
2 teaspoons ground cinnamon

DIRECTIONS:
Cream the butter or margarine and cream cheese together. Gradually add the white sugar, and continue beating until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the mashed bananas and vanilla. Add flour, baking powder, and soda; mix until batter is just moist.

In a small bowl, mix together chopped pecans, 2 tablespoons brown sugar, and cinnamon.

Divide 1/2 batter into two greased and floured 8x4 inch loaf pans. Sprinkle pecan mixture over batter in pans, and top with remaining batter.

Bake at 350 degrees F (175 degrees C) for 45 minutes, or until an inserted toothpick comes out clean. This is THE best banana bread I've ever made.
