First I remove the apple skins and cut the apples into small chunks. Next, I pour 2 tablespoons of water into a pan and add 1/2 cup of sugar and cook on low while stirring until I have a sauce. Stir in 1 teaspoon of Cinnamon and the small apple chunks. Pour the mixture into the pre-made crepes
(Basic Crepe Recipe From Carroll Pellegrinelli,

4 eggs
1 cup flour
1/2 cup milk
1/2 cup water
1/2 teaspoon salt
2 tablespoons melted butter

Measure all ingredients in to blender jar; blend for 30 seconds. Scrape down sides. Blend for 15 seconds more. Cover and let sit for 1 hour. (This helps the flour absorb more of the liquids.)

Heat in microwave 30 seconds. Bon appetite.

* 1 stick butter
* 1 cup brown sugar
* 1/2 teaspoon cinnamon
* 1/4 teaspoon fresh grated nutmeg
* 1 cup walnut pieces
* 3 Granny Smith apples, cored and sliced 1/4-inch thick
* 1/4 to 1/2 cup Apple Jack Brandy, or any other apple liquor or brandy
* 8 scoops cinnamon or vanilla ice cream
* 8 crepes
* 2 ounces crumbled Maytag Blue cheese


In a saute pan, melt the butter. Stir in the brown sugar, cinnamon, and nutmeg. Cook the mixture for 1 minute to dissolve the sugar. Add the walnuts and apples. Cook the apples for 3 to 4 minutes, or until the apples are tender and caramelized. Remove the pan from the heat and add the brandy. Place the pan back on the stove. Shake the pan a couple of times to ignite the flame. If the flame does not ignite, carefully light the flame with a match. Spread a scoop of the ice cream evenly over each crepe. Starting with one side, gently roll the crepe up like a jellyroll. Place the crepes in the freezer and freeze until firm, about 1 hour. Divide the crepes between four shallow bowls. Spoon the apple/walnut mixture over the crepes. Sprinkle the cheese over the top and serve immediately.

Crepes Ingredients
4 Eggs
1 1/2 cups Milk
1 1/2 cups Flour
1/8 tsp. Salt
1 tsp. Sugar
2 tsp. Butter - melted


Filling Ingredients
2 tsp. Butter
1 tsp. Brown sugar
1 tsp. Granulated sugar
2 - 3 oz. Brandy or Dark Rum
2 cups Fresh Granny Smith apples - peeled - sliced thin
1/4 tsp. Lemon zest
1/3 tsp. Ground cinnamon
Squeeze of Fresh lemon juice
1 cup Lightly sweetened whipped cream
1/2 cup Streusel topping (recipe follows)
Confectioner's sugar to garnish
Mint sprigs to garnish
Prepare Streusel Topping per recipe. Spread Streusel Topping on a baking lined baking sheet and bake in preheated oven at 350 degrees F. Bake for 10-15 minutes. Cool and reserve. Prepare crepe batter by whisking eggs and milk together.
Sift flour, salt and sugar into a separate mixing bowl. Incorporate egg/milk mixture into dry ingredients and mix well breaking up any lumps. Whisk until batter is the smooth consistency of heavy cream. Add melted butter and mix. Allow batter to rest under refrigeration for at least 2 - 3 hours.

To cook crepes, heat a well-seasoned crepe or non-stick omelette pan over medium heat. Pour in 2-3 tablespoons of batter and swirl to evenly spread batter in pan. Cook for approximately one minute or until batter is set. Flip crepe and cook until lightly golden brown. Slide crepe from pan. Repeat until all the batter is used and reserve cooked crepes, keeping warm.

Melt butter in a medium sauté pan. Add sugars, apple, lemon zest, cinnamon and lemon juice, sauté briefly. Remove pan from heat and add liqueur. Carefully return pan to heat, as liqueur will flame. Simmer for one minute. Cook until sauce thickens slightly. Fold crepes and place on serving plates. Top with apple mixture and with a generous amount of Streusel Topping. Garnish with with whipped cream. Dust with Confectioner's sugar and add mint sprigs.

Streusel Topping
Ingredients

1/4 cup Brown sugar
1/4 cup Oatmeal
1/8 cup Flour
1/4 cup Toasted sliced almonds, crushed
1/2 tsp. Ground cinnamon
1 oz. Butter, cut into small cubes, softened
Method
Combine ingredients in a bowl. Mix with hands until mixture turns into "crumbles". Use as a topping for cobblers, strudel, crumb pies and cakes.
Makes 1 cup
