This is the compelling true story of a chicken in the tropics.
Cast of characters:
4 (8 oz) skinless boneless chicken breasts
3 Tbsp vegetable oil
1 tsp mustard seeds
1 onion finely chopped
3 garlic cloves, crushed
1 (2") piece of gingerroot, grated
2 green chilies, seeded, chopped
1 tsp ground cumin
1 Tbsp ground coriander
1 tsp ground turmeric
1 Tbsp white wine vinegar
salt and red (cayenne) pepper to taste
1? cups coconut milk
use shredded coconut as a garnish Act 1--
The chicken goes for a swim and ends up in the frying pan.
Rinse chicken; pat dry with paper towels. Heat oil in a large skillet, add chicken and cook, turning often over high heat 8 to 10 minutes, until browned all over, then remove from pan. Pour off all but 3 Tbsp fat from pan, add mustard seeds and fry one minute, or until they begin to pop!

Things start to get spicy as the chicken falls into the company of some savory characters.
Add onion to pan and cook, stirring over medium heat 8 minutes, or until soft and golden. Stir in garlic, gingerroot, chilies, cumin, coriander, and turmeric; cook 2 minutes. Stir in vinegar, return chicken to pan and turn pieces to coat them in spice mixture. Stir in coconut milk and bring to a boil. Cover and cook over a low heat about 30 minutes, or until chicken is tender and sauce has thickened. Season with salt and cayenne.

2/3 c. flaked coconut
1/2 tsp. paprika
1/2 tsp. salt
1/2 c. sweetened condensed milk
2 tbsp. Dijon style mustard

1/4 c. butter, melted
Heat oven to 375 degrees. Mix Bisquick, coconut, paprika, and salt; set aside. Mix milk and mustard.
Dip chicken in milk mixture; coat with coconut mixture. Place in ungreased rectangular pan and drizzle with butter. Bake 35-40 minutes. Serves 4. Caribbean Coconut Chicken
INGREDIENTS:
4 skinless, boneless chicken breasts
1 teaspoon vegetable oil
1 1/2 onions, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 tablespoon chopped roasted garlic
1/2 (14 ounce) can coconut milk
salt and pepper to taste
1 pinch crushed red pepper flakes
DIRECTIONS:
Preheat oven to 425 degrees F (220 degrees C).
In a large skillet, fry chicken breast in vegetable oil until the chicken just begins to brown.
Stir onions, green bell peppers and red bell peppers into the skillet with the chicken. Saute until the onions are translucent. When the vegetables are translucent, stir in the garlic and coconut milk. Let the mixture cook 5 to 8 minutes before removing the skillet from the heat. Season with salt, pepper, and red pepper flakes.
Transfer the mixture to a 9x13 inch baking dish and bake in a 425 degrees F (220 degrees C) oven for 45 minutes, or until the vegetables cook down and the chicken is tender.
Thai Coconut Chicken
INGREDIENTS:
2 cups dry jasmine rice
3 cups water
1 1/2 pounds skinless, boneless chicken breast halves - cubed
1 tablespoon curry powder
2 cups 1 inch pieces asparagus
1 cup snow peas
1/2 cup shredded carrots
1 cup chopped green onions
1 (14 ounce) can coconut milk
DIRECTIONS:
In a 2 quart saucepan, combine water and rice. Cover, and bring to a boil over high heat. Reduce heat, and simmer for 20 minutes.
In a medium size bowl, combine the chicken and curry powder, and toss to coat.
Coat a large nonstick skillet with cooking spray. Cook the chicken, stirring frequently, over medium-high heat for 4 minutes. Mix in the asparagus, snow peas, carrots and green onions; cook for 3 minutes. Pour in the coconut milk , continue cooking until sauce is hot, and chicken is cooked through. Serve over the hot, cooked rice.
