Answers:
I use medium size eggplants, they're less bitter
-Slice eggplant into thin slices
-Salt slices to remove some bitterness for 20 min
-Wash and dry slices
-coat slices in flour, then dredge in beaten eggs, then dredge in a combo of italian/panko breadcrumbs
-heat olive oil in frying pan, and fry eggplant until golden
-drain on paper towels
-layer bottom of baking pan (I use a 13"x9" pan) with eggplant slices, top with your favorite marinara and shredded mozzarella (you can also add some sliced cooked peppers/onions or some cooked ground beef for some extra flavor), continue until pan is full
-liberally sprinkle top layer with shredded mozzarella (I also add a little grated peccorino romano for flavor)
-cover with foil, use toothpicks so foil doesn't touch top cheese layer, and bake for about 30 min at 350...
or follow the same steps but layer everything in a crockpot and heat until cheese is melted all throughout
