Poach the eggs. There are certain things you can buy that you place over a frying pan that lifts the egg off the bottom of the pan and gives them the round shape. Toast an English Muffin to put the egg on. And you need hollandaise sauce which you can buy in the baking aisle I belive. It comes in a little package for less than $1 and the instructions are on the back. But I think you add water to it and put it on the stove, but not for very long. The last thing you need is some Canadian Bacon which you cook in the frying pan as well.

This is the classic recipe. You can substitute crab meat or spinach for the bacon.
Slice muffin in half.

Toast the muffin, then butter.

Put grilled crispy bacon on muffin.

Put poached egg on top of bacon.

Drizzle with hollandaise sauce.

Hollandaise sauce is not difficult, you just have to watch over it! Toast some English muffins. Top with you choice of meat...traditionally it's canadian bacon, but once in awhile I make it with salmon and it's delicious! Next top with poached eggs and finally hollandaise sauce.

To poach the eggs, crack one at a time inte a measuring cup. Boil some water or chicken broth. I like to do broth because it gives the eggs even more flavor. Make sure your liquid is at a constant but not rolling boil. Carefully slip the eggs in, one at a time, to the liquid. Poach until desire doneness.

For the hollandaise, gather, 3 egg yolks at room temperature, 1 tablespoon of water, 2 teaspoons lemon juice, and 3/4 cup butter at room temperature. In top of double boiler over low heat, whisk egg yolks, water and lemon juice until fluffy. Check water in bottom of double boiler so it doesn't touch bottom of top half or boil.
Add butter, piece by piece, making sure each piece is incorporated before adding the next; continue until all butter has been used. Season with salt and white pepper, sprinkling with paprika or red pepper, if desired.
Pour over your eggs and enjoy!
