Ahhh, you have touched on one of my favorite "cooking" delights!

It's really, really easy. The last question first. They can last up to 4,000 years that we know of. That's right, they have been found in tombs and still have their aroma. The oil basically sticks around forever unless exposed to heat and bright light. Even in light (not enough to break down the oil) cooking oil will last generations.

OK, back to the real question. First, if you plan on cooking with the oil and its not for decoration, buy the absolute best Extra Virgin Olive Oil you can afford. You can add virtually anything to it. Get yourself at least a couple empty bottles, preferably the kind with "lock top" (you know like European beer) and a funnel. You can add any amount of chili peppers, fruit, spices, etc. I like to pull fennel, thyme, and a couple other varieties from the garden and after rinsing off, stuff the sprigs and all in the bottle. You then simply pour the oil through the funnel until the bottle is almost full. Set away in a dark place and before you know it, you have flavored cooking oils. Do not be afraid to experiment. I love my Garlic, Shallot, Lemon, Jalapeno combo. The longer it is in the bottle the more flavor there is but not enough to overpower whatever you are cooking. heat up a really hot pan with evoo (extra virgin olive oil) and chop garlic in it after let it cool and put it in a comtanier. you can make many more like rosemary oil.follow the same directions but instead of adding garlic add rosemary...hope that helped
