This is just how I do it... it may not be the right way, but my hubby loves em.
Obviously you need a few hard green tomatoes and a skillet with fresh oil. Slice the tomatoes at least 3/4+ inch thick. Pat them dry with a towel or paper towel. Dip in butter milk/ milk. Coat in flour mix (I use self rising, garlic salt, salt, pepper, and a tiny bit of nutmeg) then simply fry them at med high heat untill they are golden brown. I usually serve them with honey mustard or sour cream. (my hubby also likes them with american cheese melted over top, I'm not sure about that bit)

Slice the tomatoes then dip them in milk, egg or buttermilk, then dip in flour/meal mixture... let grease get hot in pan, put battered tomatoes in..salt and pepper them..let them brown...and enjoy... first of chill them makes it easier to cut them wash then cut that is.....take a ziplock bag and add either cormeal and flour or flour whatever your preferance.....put them in and shake only a couple of them at a time......have your oil in you frying pan hot but not enough to scorch them place them in when they get golden brown they are finished

Slice tomatoes thick, salt & pepper them, dip them in corn meal and let fry for about 3-5 minutes. Very simple and delicious!wash and dry very green tomatoes
slice half inch thick ( toss the heels in salads or relish)
dredge in seasoned flour
dip in buttermilk paste
dredge in cornmeal
fry in bacon grease till golden brown or to taste
flour seasoning can be anything you like
i like Cajun so i use lots of chili peppers (pasilla, guajillo, cayenne and any others available) dry onion dry garlic
oregano salt paprika etc.
buttermilk paste is buttermilk with flour to the consistency of
loose mayo.
