I personally don't think that you can actually overcook pork. I usually just cover it with tin foil and add a little bit of water in the bottom of the pan and cook that sucker until your whole house smells great...I'd give it at least a couple hours.
do you mean shoulder of pork..... or a pork loin... cant be both.
