For 25min you cook roast beef.
There is only ONE unbelievably incredible way to cook roast beef and it works almost the same in fan assisted or regular oven. This recipe is credited to Craig Claiborne, and it takes a LOT of TRUST to make it the first time, but once you make it once you will never use another way.

-Preheat oven to 500d (Yes, i said 500!)
- Season Roast (I use fresh garlic, black pepper, basil and am always on the fence about the whole salt thing.
- Put the roast in the oven
- Roast in this way - with bones(standing Prime Rib), 15 mins per rib bone, without make it 12 mins per pound
-Now, this is the trick and the important thing - after the alotted time, turn off the oven, and leave roast in oven 1 hour and up to 2.5 hours (it's awesome for company, you have a lot of flexibility with serving a perfect roast)
BUT, here's the catch - at NO TIME DURING THE ENTIRE PROCESS CAN YOU OPEN THE OVEN DOOR! You just have to trust it, this produces a PERFECT roast every time, crusty crunchy on the out side, perfectly pink on the inside.
