start off by cutting your whole chicken into quarters. Then put the quartered chicken in regular temperature water in a large enough pot so you have at least one inch above the top of the chicken, and a few inches from water line to the top of the pot.
you will most likely use at least one gallon of water ( minimum). enough to cover the complete chicken. ( water needs to be above the chicken at all times, check the water level and fill it so the water covers the chicken through out the cooking ).
Now this is the KEY to the best chicken soup you will ever have, put in at least two table spoons of SALT ( again this is a minimum of two table spoons) I usually put in a little less than a quarter of a cup of salt. The salt pulls all the good stuff from inside the bones and the chicken, this adds to the flavor and the ability for the soup to help you fight off a cold.
Bring the water and chicken to a boil then lower the heat to simmer for a few hours. between tow to three hours, enough for the chicken to just fall of the bone.
Drain the chicken and broth into a colander and another large pot, make sure you save the broth. Place the broth back into the pot and let the chicken cool in the colander while you are cutting your vegetables,for example: celery, carrots, onion, and any other vegetables you like.
I also put in rice to the amount of my liking ( I like more rice than most, you have to find the amount you like).
I also I break up some kind of noodles ( but I only put the noodles in towards the end so they don't get all mushy).
While the rice and vegetables are cooking I de-bone and cut up the chicken.
I add the chicken when the vegetables are cooked, just to warm up the chicken again for a few minutes.
Believe me the salt will only help the taste, not make it taste real salty. I was hesitant the first time I tried this myself but I will not make any other type of chicken soup!

You should bring the water to a boil and then turn the stove to low and simmer the chicken for at least 3 hours, longer for a richer broth. In the last hour add any veggies (except onions and garlic which can go in at the begining) and with around 15 minutes to go turn it up and add any pasta.
