But to me it is a subjective question as it depends on how you like your vegatables, I like mine on the raw side and some people like them stodgy and well done.

I wouldn't use a PC for veggies! Just use a steamer!

A PC is best for dried beans or peas, tough cuts of meat, or stews. You can do a pot roast in about 45 minutes, dry beans in about 20, and stew in about 20-25. (Add veggies to stew after PC lid is off or they will turn to mush.) You don't steam vegetables in a pressure cooker. Steaming vegetables is used to preserve their nutrition, flavor and color, and is done in a steamer. It can be done in a regular pan with a metal net in thebottom to keep the vegetables out of the water, and of course a cover. Each vegetable is different because of their texture but as little time as possible. Spinach one minute, broccoli 10. Use a pressure cooker for only the hard root vegetables and follow manufacturer directions.
