* 1 onion, finely diced
* 1 egg, beaten
* 8 saltine crackers, crushed
* salt and pepper to taste
* 1 stalk celery
* 1 cup cornmeal
* 1/8 cup canola oil
DIRECTIONS:
1. In a medium size mixing bowl combine salmon, onion, egg, crackers, salt, pepper, and celery. Mix well.
2. Make patties out of salmon mixture and roll in cornmeal.
3. In a large frying pan over medium high heat oil for frying. Place salmon patties in oil and fry on both sides until golden brown. Drain well. Serve warm.
not fair! jaimestar64c swiped my recipe! except I use peanut oil instead of canola- but she/he deserves the best answer having given it first. I take a can of salmon ...take out the bones and juice....add an egg, apx. 1/4 cup vegatable oil, and flour enough to make the right consistancy. drop by tablespoonfuls into hot grease in skillet and mash flat......fry til golden brown on each side...turning once.
* You can also add chopped onions if desired.
SALMON PATTIES
16 ounces pink salmon, canned
1 egg
1/3 cup onion, minced
1/2 cup flour
1 1/2 teaspoons baking powder
1 1/2 cups vegetable oil, for frying
Drain salmon. Set aside 2 Tablespoons juice in mixing bowl. Mix together salmon, egg, and onions until sticky. Stir in flour. Add baking powder to juice, then stir into salmon mixture. Form into small patties. Fry until golden brown (about 5 minutes).

First find a bear(grizzlie preferred),feed the bear with your salmons.Afterwards punch the bear very hard in the stomach in order to make it puke out the half-digested salmons...put the pink puked salmons on a plate,chop some red onions on top,with a few drops of lemon juice and olive oil...there you go...best served with peppermint fart! 1 can red salmon(do NOT drain or remove bones or skin-lots of minerals and flavor)(Red slamon costs a bit more,but has more flavor)

S Ingredients:
one can red salmon
1/2 stalk celery
small interior celery stalks including leaves
1/2 small onion (2"diameter)
1 egg@room temperature
3/4 cup seasoned breadcrumbs
1/2 tsp pepper
NO salt
1 tbs mayo
1 tbs dill pickle relish
Instructions:
drain juice from can
slowly allow salmon to slide from the can into your other hand; trying to keep in tact
gently open salmon from the center to expose any bone and remove
break up salmon in bowl
add chopped onion, celery stalk, and small celery cluster
add egg, breadcrumbs, relish, mayo, and pepper
gently knead the ingredients until the mixture holds together
if too wet; add breadcrumbs (little at a time)
if too dry; add some of the poured off juice (little at a time)
form into patties (should make four)
add 5 tbs oil to large skillet
test the temp by placing a small peice of onion in the pan
if it does not sizzle immediately; your oil's not hot enough
once the patties are frying; do not mess with until you see a slight
crispness forming around the bottom edge
with a large spatula, quickly scoop up the pattie, turn and cook on other side
at this point you can slightly lift the pattie to check if done
do not over cook; patties will come out dry
Tartar sauce:
mix 2 tbs mayo to four tbs of chopped dill relish
