Recipe Summary

4 pounds yams (or sweet potatoes), peeled and cut to large bite-sized pieces
2 cups orange juice
3 cups light corn syrup
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 cup vanilla extract
2 teaspoons lemon zest
2 tablespoons flour
1 1/2 cups light brown sugar, packed
1 1/2 cups granulated sugar

Preheat oven to 350 degrees F.
Boil yams until slightly underdone, to avoid breaking. Strain, cool and set aside.

In a large container whisk together orange juice, corn syrup, cinnamon, nutmeg, vanilla and zest. In another bowl, whisk flour and both sugars together.

Put cooled yams in a deep baking dish, add dry ingredients and stir to coat. Pour liquid over yams and bake for 20 to 25 minutes.

In large saucepan of boiling water, add noodles and garlic. Cook for 4 minutes. Add yams and continue cooking for 4 minutes. Add broccoli and mushrooms and cook for another 2 minutes or until all vegetables are tender. Drain well. Place in bowl. Toss with cheese, soya sauce, thyme and pepper until cheese melts. Serve immediately. Makes 4 servings.

2 c Assorted fruits sliced: Apples, Pears, Tangerine Sections, Grapefruit or Pomelo, Grapes, Firm Papaya Strawberries, Oranges
2 tb Oil
1 Shallot, thinly sliced
3 Cloves garlic, thinly sliced
Juice of one lime
1 ts Kosher salt
1 ts Sugar, or to taste
? c Cooked shrimp
2 tb Chopped toasted peanuts
1 Fresh red chili, seeded and finely shredded

1. Cut fruit into bite-sized pieces. If using pomelo, peel indi- vidual sections and break apart into grains about the size of a grape seed. if grapes contain seeds, split and seed them. Toss apple or pear slices in a little citrus juice to keep them from oxidizing. 2. In a small skillet or saucepan, heat oil over low heat and gently fry shallot and garlic until lightly browned. Remove and drain on paper towels. 3. In a medium bowl, combine lime juice, salt, and sugar (if used) and stir to dissolve. Add fruits, shrimp, and half the garlic and shallot and toss to coat evenly with dressing. Taste and adjust seasoning if necessary. Transfer to serving dish and garnish with remaining garlic and shallot, peanuts, and chile. Serves 4 with other dishes.


Here's an easy way to make some sweet yams.

1 yam
brown sugar
cinnamon-sugar (there is a mix in the spice section)
butter

Peel and boil the yams for 30 minutes or if you're in hurry,
In a microwave safe bowl, peel, chop and add the yams.
Fill with water and cover with waxed paper or paper towel. Microwave on high for 5 minutes for a med yam, 8 min for a large one.

When yams are cooked, carefully drain water. Return to pot or bowl. Add a dash of cinnamon sugar, 2 tsp butter, 2 tsp brown sugar. Mix well or mash. Serve hot. I prefer a twist to traditional yams :

4 cups sweet potatoes, mashed
1/2 teaspoon salt
1/4 cup butter
2 eggs, beaten
1 teaspoon vanilla
1/2 cup sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg

Mix all ingredients. Pour into a casserole dish.

Topping
1/4 cup butter
3 teaspoons all-purpose flour
1 cup brown sugar
1/2 cup chopped nuts (I use walnuts)

Sprinkle on top til gone.

Bake at 350 for 30 minutes
