Ghee Rice

Ingredients

Basmati Rice 1 cup
Onion 2 sliced
Tomato 1 sliced
Garlic 5 flakes sliced
Green Chillies 3 sliced
Coconut milk powder 6 table spoon
Cinnamon 1 inch
Cloves 1
Water 2 cup or less.
Curry leaves small amt.
Ghee 2 teaspoon.
Oil 2 teaspoon

Method:


Soak the rice in normal water for 15 minutes.
Prepare coconut milk with the 2 cups of water. Set it aside.
Take a frying pan, pour 2 teaspoon of ghee & slightly fry the soaked rice.
Take pressure cooker, pour oil fry cinnamon, cloves, then add onion & garlic and fry it.
Add green chillies, tomatoes, curry leaves & fry it.
Add the coconut milk, add salt to taste & allow it to boil.
Now add the fried rice & cook for 1 whistle.
Serve it with Chips & Raita.

Ingredients
2 cups raw rice
1 medium sized onion, sliced finely
3 tablespoon ghee(clarified butter)
1 cinammon
1 clove
1 cardammon
1/2 tsp cumin seeds
1 tsp chopped cashewnuts
3 green chillies, minced
1/2 tsp ginger paste
1/2 tsp garlic paste
Salt to taste
2 tsp chopped coriander leaves for garnish

Method
Heat the ghee in a pan and add the cinammon,
cloves, cashewnuts, cumin and cardamom.
Fry for 10 seconds and add the ginger-garlic paste.
Fry for another 10 seconds and then add the
green chillies and onion.
Fry till the onions turn light brown.
Now add the rice and salt to taste.
Let the rice fry for about 5-6 minutes and get coated
with the ghee mixture.
Now add 4 cups of water and pressure-cook or cook in
the microwave till the rice is completely done.
You can also cook it on the stovetop, by keeping it
covered on a low flame.
Serve hot garnished with chopped coriander leaves

1" cinnamon stick broken
2 each of bay leaves and cloves
1 teaspoon(s) black peppercorns
6 medium sized onions finely sliced
4 tablespoons clarified butter (ghee) / butter
salt to taste


Heat the clarified butter (ghee) / butter in a heavy-bottomed pan till hot. Add the whole spices and fry for a few seconds. Add the onion slices and saute for a few seconds on high level. Lower the heat and saute on medium / low level till the onions are transparent and soft.
Add the rice and saute for a few seconds. Pour in the warm water and add the salt. Bring to a boil, cover and cook on a low level for about 15 minutes or till the rice is done and all the water has evaporated. Separate the grains of rice with a fork.
TIPS:

Ghee may be readily available off the shelf in Indian stores. However, it is important that it be fresh stock.
Traditionally flavored rice or Basmati rice is used for this recipe. If it is difficult to obtain Basmati rice, any other long-grained rice is fine.
Traditionally the rice in this dish is cooked with hot water till soft and little mushy unlike the firm and grainy rice like above. However it tastes simply amazing either ways.
Serve hot with any of the Vegetable Dishes.
Wash rice and leave to drain.
Heat ghee and fry drained rice. Stir, do not let rice burn.
When rice has turn white, add water and cook as per normal rice.

This is Mahua Chakraborty. I am a bengali settled in NewYork. My mother-in-law used to prepare nice 'ghee-rice'.
Let me try to give u the recipe out here. It's from the famous "Angithi". You can surf the website and find more recipes of this kind and others from there. See if it helps...

Ingredients

- 1 kg (Basmati preferred) Rice
- 250 gms. Ghee
- 30 gms. Washed & Soaked in water to soften. Raisins
- 1 tsp. Salt
- 3 Bay Leaf
- 4 inches Cinnamon
- 4 Cardamom
- 6 Cloves
- 250 gms. Onion

Instructions

1. Wash the rice and drain it properly.

2. Slice the Onions thinly. Fry till golden brown, then drain and set aside.

3. Measure the rice in cup and using same measurement pour double amount of water in a large pan and set to boil.

4. When water boils add rice, stir and half cover and cook on medium flame for 15 to 20 min.

6. Immediately wash the rice with cold water to remove the starch.

7. Heat Ghee in a separate pan, then put Bay Leaf, Cinnamon, Cardamom, and Cloves and fry till they start to splutter.

8. Add rice using a skewer and stir it for a minute. Then add salt and raisins and cook for 5 minutes more.

9. Sprinkle with previously browned onions and serve immediately.
