Chicken Breast & Pepper
Ingredients:
2 slices of boneless chicken breast or leg, 1 lb (450 gram)
1/4 teaspoon black pepper
1/3 teaspoon salt
1 Tablespoon minced Garlic
1 Tablespoon oil or butter
Methods:
1. Use back of cleaver to tenderize chicken. Sprinkle with salt and pepper on both sides of chicken.
2. Heat pan, add oil or butter, fry each side of chicken slices over high heat for 2 minutes. Reduce heat to medium, fry each side 2 minutes until golden brown and cooked. Remove chicken. Use remaining oil to stir-fry garlic until fragrant then drizzle it over chicken. Serve warm with "Vegetables".
Notes:
1. If oven is used, bake chicken at 450°F to 500°F for 18 minutes. Sprinkle with minced garlic and continue to roast for 5 more minutes.
2. Steamed or boiled snow peas should be used with this recipe. Remove veins from both ends before using.
