check the purdue website and go by pound and weight. ur best bet, as this sounds like ur a first timer, try a reynold's plastic cooking bag, there is a chart inside the box of bags that tell u time & temp. u'll find it where u find foil in the supermarket...
Try the crockpot! www.crock-pot.com has some great recipies (love the chicken with 40 cloves of garlic!!). If you are just putting it in the oven, it really depends on the size of the bird. Usually an hour to an hour and a half at 350 degrees does it. I like to make rosemary potatoes (chop up potatoes into cubes, toss crushed rosemary and salt on top, spritz with cooking oil and pop in 350 degree oven for about an hour).

Keep the menu simple with good flavors. It's less stressful.
Menu:
Orange Glazed Chicken
Roasted asparagus
Rice Pilaf
and a white wine would be best.
For dessert you could have flavored coffee w/whipped cream,
or orange sherbet with shortbread cookies
Chicken:
1 Roasting chicken 6-7Lbs, cleaned,patted dry
1 onion, peeled and cut in half.
grated orange peel from 1 large Naval orange
Cut orange in 1/4 after grating
1 small froz.OJ can, thawed
salt and pepper
1 tsp onion powder
dash of curry powder
Salt and pepper inside of raw chicken. Place halfed onion and 1/4 orange pieces inside chicken.
In a small saucepan mix, thawed frozen oj, salt & pepper, onion powder, and a dash of curry powder(set aside)
In a 9x13 baking dish place a cooking rack. Cover with a large piece of foil (enough to wrap around chicken)
Place Chicken on top of foil covered rack. Brush the chicken with the OJ mixture. Cover Most of the chicken with the foil (you can leave it open at the top of the chicken)
Place on the lower rack of the preheated 350 degree oven.
Bake for 60-70 min, Basting(brushing) with the OJ sauce every 15min. The last 15 minutes, uncover the foil to brown the chicken.(When the chicken is done if you poke a knife into the meat and the juice is clear-it's done)
While the chicken is cooking the last 20 minutes or so-cook your rice and prepare your aparagus.
Set the Chicken on top of stove to rest. On a cookie sheet place the cleaned asparagus spears. Salt and pepper them. Drizzle with Olive oil. using your hands make sure that all the asparagus is covered. Bake in oven at 350 for 5-10 min.
It's easy and so delicious. Good Luck and Enjoy. If you're not usually big on cooking, go with something simple and low maintenance like roast chicken, or chicken and rice.
Roast chicken:
season a whole bird with about 1 teaspoon each:
salt
pepper
sage
thyme
Cook in a 350 degree oven about 1 and 1/2 hrs for an unstuffed bird. Have a can of chicken broth handy, you will need to baste about every 30 minutes. Use a dutch oven with a lid, or make a foil tent to keep the bird from drying out.
Good sides are mashed potatoes with gravy made from the chicken broth, steamed veggies and rolls.

Chicken and rice:
Whole chicken cut up
1 can cream of celery or cream of chicken soup
1/2 small onion chopped
1 cup chopped celery
1 cup chicken broth
1 cup uncooked rice
about a teaspoon each salt, pepper, thyme, and sage
mix all ingredients except chicken in a small dutch oven or any ovenproof dish with a lid. Push most of the rice mixture to one side, and put the chicken pieces in the other side. Bake at 350 degrees for 1 1/2 to 2 hrs, depending on your oven. (Check it at 1 1/2 hrs) This is super easy and comes out great. The rice is really creamy and almost like risotto. Serve with salad and bread or steamed veggies.
Most people drink white wine with poultry, I'm a beer girl myself. I know this will be the best chicken you ever had! The easiest to make. Here's what you need-Large glass baking dish, Boneless chicken, 3 egg's and 2 package's saltine cracker's and 1 stick real butter. Take the cracker's crush them up real fine. It is best to put them in a blender it is easier then doing it by hand. Then put them in a bowl on the side then get another bowl and take the 2 egg's and crack them in the bowl and mix and set that to the side.Then turn the oven on to 400 degree's take your large glass dish out and put the 1 stick of butter in it and stick it in the oven until butter melts then when it melts take it out and set it on top of stove until you get the chicken ready. Now take the boneless chicken. Dip it in the egg's then into the saltine cracker's until coated then put it on top of the butter in the glass baking dish. Cook for 20 minute's then take it out and turn the chicken over and stick it back in oven for 20 more minute's.It should be done but cut the chicken if it is white it's done. This chicken will melt in your mouth I promise!!!
