Pumpkin Cake

INGREDIENTS:
2 cups sugar
1 cup vegetable oil
4 large eggs
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1 teaspoon baking powder
1/2 teaspoon salt
2 cups pumpkin puree or cooked mashed pumpkin
cream cheese frosting, below
1/2 cup chopped pecans

PREPARATION:
Directions for pumpkin cake
Combine sugar, vegetable oil, and eggs in a large mixing bowl; mix well. Sift dry ingredients into a separate bowl; stir into oil mixture, beating well. Stir in pumpkin puree. Pour batter into two greased and floured 9-inch round layer cake pans. Bake at 350° for 35 to 40 minutes. Turn out onto racks to cool. Frost pumpkin cake with cream cheese frosting and sprinkle with chopped pecans.

Cream Cheese Frosting

1/4 cup butter
1 package (8 ounces) cream cheese, room temperature
1 pound confectioners' sugar, sifted
2 teaspoons vanilla extract

Combine all ingredients in large mixing bowl; beat well until smooth. Makes enough for 2-layer pumpkin cake.

PUMPKIN PIE CAKE

1 (#2 1/2) can pumpkin pie mix
1 sm. can evaporatedmilk
1 egg
1 pkg. spice cake
1 cube melted butter
1 c. chopped nuts

Beat eggs slightly, add milk and pumpkin pie mix. Stir thoroughly. Use a 9x13 inch greased pan. Put pie mix in and then sprinkle cake mix over pie mixture. Drizzle melted butter over all. Add nuts. Bake in 350 degree oven for 1 hour or until pumpkin sets. Serve with Cool Whip. Serves 12.

Pumpkin Pie Cake

1 (18.25-ounce) package white cake mix
1 cup chopped nuts
1/2 cup unsalted butter, melted
1 (15-ounce) can pumpkin puree
1 (12-ounce) can evaporated milk
3/4 cup granulated sugar
2 large eggs
2 teaspoons pumpkin pie spice
1/2 teaspoon salt
Preheat oven to 350°F. Grease a 13 x 9 x 2-inch baking pan.
Combine cake mix, nuts and butter until well mixed. Press mixture into bottom of prepared baking pan.
In a large bowl, combine pumpkin, evaporated milk, sugar, eggs, pumpkin pie spice and salt. Beat with an electric mixer on medium speed for 2 minutes or until thoroughly combined. Spread over crumb mixture.
Bake for 50 to 55 minutes, or until set and tip of knife inserted into center of pan comes out clean. Cool on a wire rack. Cut into squares and top with sweetened whipped cream if desired.
Makes 12 servings.
