Okay! I don't know where you live, but there are some totally awesome regional cooking classes that are turning up in soooooo many communities! Local colleges offer them as well. These are not classes for credit, these are classes for a new way of eating and a new way of cooking and viewing what we eat.

If that's not available to you, or your schedule does not permit it, Take some time to do a little research in your library or right at home on your computer. I don't have the list any more, but there was one that talked about all the things we THINK are great and wodnerful for us, taht really like are NOT! ( like for example, I used to chow on carrots in fat free ranch dressing to ward off my hunger and then i found that list and learned carrots turn to sugar which.... well ya know.. keeps ya over weight.)

You will learn a lot of great tips here, cause lots of these people have some great personal experiences to share.

Never deprive yourself of something because it's a no-no. That's a classic trail straight to failure. I used to cook in batches several weeks worth of meals in one day and freeze proper portions so I didn't have to think about it. I often found I was consumed thinking about food, which led me to make bad choices when cooking or shopping and by having it already done, it was just there. I added proper fresh fruits and vegetables with the meals. ( Lik eif it was stir fry, I cooked the meat and froze the meat portion for one meal for me)
I think that's the biggest cooking secret I can share with you or anyone.

Other Answers:
Make a meal plan for the whole week, good choices, carbs, proteins, whole grains, fruits and veggies. Then stick to it. Do all your shopping each Saturday. When you get home from work, make the meal that you had planned. Throw away all foods that are fatty, starchy and full of salt. If you stick to this plan you will loose weight
eat cheerioes for breakfast and lunch and then have a super healthy dinner for 1 month and you will lose a lot of weight
If you're baking muffins or a cake, substitute apple sauce for the oil.

Try using spices on your food instead of sauces.
everyone is different. but i can tell you what i did that helped me lose about 30 pounds in the last year. I stopped drinkin cola (pepsi, mountain dew, etc etc.) theres so much sugar in those once you stop drinkin it you drop like 10 pounds. Another thing is, just drink water whenever your thirst, theres so much sugar in almost every drink there is, changin your drinkin habits helps alot. Here's another thing. i started buying those lean cuisine meals. they are actually really good. it takes a while to get used to eatin just one box. but once you get it, you feel satisfied. Oh and try to eat your biggest meal durin lunch or breakfast. because dinner is the meal that gets everyone abit on the heavy side, since after dinner most people go to sleep, or lay around. you really dont burn off any of those calories. So eat ur big meal mid day, and for dinner learn to eat a small portionized sized meal. It should bring you down a notch on the scale. hope this helps.
ps. Make a meal journal. write down everything you eat and drink with the calories..and youll start to eat less, cause your brain gets the idea.

slack off on meats, cheeses and pastries. and drink lots of water, go to bed at a decent time get a diffinate of 8-9 hours of sleep. and when you eat dont eat more than you can handle, when you are full dont pick around. and dont eat in between meals. I am sure you have heard that alot, but it helped for me. oh and eat a good size breakfast, but dont eat passed like 6:30.P.M Good luck you can do it!
lots of water and fruit
eat more veggies and fruit. When it comes to pastas and things like that weigh the food out and count the calories. Stay away from breads and sweets.
Cut out those CARBS missy! Thats the only way to loose the weight....carbs meaning: refinded carbs like cookies, cakes, muffins etc & SUGAR! Sugar is DEATH and when I say death I mean WHAT PUTS ON THE POUNDS! Watch out for hidden sugars in all foods! Read nutrition labels and try to eat things in their most natural state, like veggies and lean meats!!! Fruits are alright as desserts but they do contain sugar so if you eat too many and start gaining weight you know why!
Graze...eat small meals 5-6 times a day rather than larger meals 2-3 times a day.

Bake, don't fry.

Watch your sodium intake (sauces, gravies, etc).

Also, add a significantly larger amount of fruit, vegetables, and water to your diet.
