Use shrimp & Crab meat ground up w/ parmesean, minced garlic & a little olive oil to keep the mushrooms from drying out, top w/ seasoned bread crumbs & bake, delicious!
Make a creamy butter cheese dip w/ green onions to pour over the top as a sauce, makes it beatiful, different & tasty!
TO MAKE THE BUTTERY CHEESE SAUCE:
MELT ABOUT 4 TBS BUTTER IN A SAUCEPAN
ADD ABOUT 2TBS FLOUR, COOK, STIRRING CONSTANTLY UNTILL
BUBBLY, ADD ABOUT 1 CUP OF MILK, STIR UNTILL CREAMY
ADD CHOPPED GREEN ONION, & SOME SHREDDED CHEDDAR( HOWEVER MUCH YOU WANT, TO YOUR DESIRED CONSISTENCY, UNTILL MELTED
(YOU CAN EVEN ADD SOME LUMP CRABMEAT)ADD A FEW PINCHES OF SALT & A LITTLE GROUND BLACK PEPPER TO THE SAUCE.

We use a stuffing that you might try...it's great on the bigger mushroom caps. It's just pork sausage, brought to room temp, uncooked. Add italian seasonings to taste to the sausage, and roll into small balls, stuffing them into the mushroom caps. Bake uncovered at 350 until the sausage is done (firm). Remove from oven. You can use a jarred spaghetti sauce for time's sake, but I make my own sauce and freeze the leftovers, so I usually have some sauce already ready. Add red wine and any other add-ins you like to spaghetti sauce and pour over the mushrooms. You can reheat these right away, or better yet, let them sit in the sauce overnight and serve them as a veggie at your next meal, or we use them as snacks when company comes or during parties. These freeze well, too, so you can make more than enough and save some for later!
morel mushroom are great with deviled eggs......use a cheese sauce over all
This is the recipe we used on the Carolina Dinner Train
Combine 1 cup flaked crab meat
2 beaten eggs
1/2 cup hopped onion
3/4 cup chopped celery
1/2 cup chopped red andgreen peppers
1 cup bread crumbs
1 Tbsp. worchestershire sauce or Sherry
Mayonnaise to moisten
Horseradish to taste
1/4 cup chopped basil
Mix together in processer and fill the mushroom caps
Sprinkle with parmesan before baking
Bake 350 for 10-15 minutes
