My husband makes the best meatloaf. Use a mix of ground beef, veal & pork. Most stores carry it. And he puts bacon on top....it's yummy. Here are two of my three favorites:
Mushroom Meatloaf
6 oz can mushrooms, drained and chopped
15 oz can sloppy joe sauce
1 lb extra lean ground beef
1 c quick oats
1 egg
1 tsp sodium free Italian dressing
Pour ? can sloppy joe sauce and all other ingredients into a bowl and mix gently. Squish into a football shape on a foil lined pan. Bake at 350 degrees for 30 minutes. Pour remaining sauce over loaf and bake 30 minutes longer or until no longer pink inside.
Serves 6
Per serving: 281 calories, 10g fat, 4g saturated fat, 20g protein, 27g carbohydrates, 2g fiber, 866 mg sodium.

Turkey Meatloaf Ring
14 oz. ground turkey
2 eggs, lightly beaten
18 saltine crackers, crumbled
? c uncooked oatmeal
3 T oat bran
1 c green peas
? c finely chopped onions
1/3 c corn
2 T chopped parsley
1 T Worcestershire sauce
1 clove garlic, minced
? t salt
? t pepper
6 oz tomato sauce
2 c steamed cauliflower or broccoli
In large bowl, mix all ingredients except steamed veggies.
Pour into a ring pan or 9 x 5 loaf pan that has been sprayed with a non-stick spray.
Bake at 350 degrees for 50 to 60 minutes. Let stand 15 minutes.
Unmold onto a serving platter and garnish with steamed veggies.

2lbs. groud beef
1 pack french onion soup
1/4 cup water
2 eggs
3/4 bread crumbs
1/2 ketchup.
mix all top with ketchup and bake for 1 hour or until done
also dont put it in a loaf pan or the grease wont drain put it in a baking dish and mold it in to a loaf. try it, its tasty and simple.

There are dozens (hundreds? thousands?) of recipes out on the Internet on sites such as recipe.com. However, I say, why constrain yourself to a recipe? Try what you like best and make your own!
When making a meatloaf, there are a few key ingredients:
- meat (generally ground cow or turkey but you could add sausage, too)
- one egg or egg substitute (used to bind everything together)
- breadcrumbs or finely torn pieces of bread (used to bind everything together)
Everything on top of that is up to you to vary. Here are some thoughts:
- Sautee some vegetables in olive oil until they start to give but aren't quite cooked through (possibilities are zucchini, onions, shallots, sun-dried tomatoes, fresh spinach, yellow squash, etc.)
- Add spices and herbs you enjoy (freshly ground pepper, kosher salt, and minced garlic are standards, but you could add rosemary, basil, bay, oregano, italian seasoning, and other flavorful additions)
- Add wine, soups, or sauces as desired (just make sure you keep the amounts limited or add enough bread and meat to absorb the additional liquid, otherwise your loaf won't bind)
- If you want to get really creative, you could try adding various fruits and nuts, too (I don't care for it, but I've heard good things from some people...examples include dried cranberries and sunflower seeds).
Generally, for proportions, I use 1 lb. meat, 1 egg, 1/3 c. bread or bread crumbs, and 1 c. vegetables. I mix it all together, place in a Pyrex-style dish, and bake at 350* for 45 minutes or so (until I can confirm the temperature with a meat thermometer). I generally discard the drippings and add a light tomato sauce (maybe a really good marinara, if you know one that's not too sweet) to the top and then bake for another 5-10 minutes. Then, let cool and serve.
Important point...if you add vegetables to your meatloaf, I highly recommend sauteeing them first to ensure they're cooked through and not too dense. Also, uncooked vegetables added to the meatloaf contain more water and take up more space, so they could make your meatloaf fall apart as it bakes.

Italian Style Meatloaf
Great for any occasion, and absolutely delicious. Excellent served with noodles (or mashed potatoes) and corn. Substitute white bread for wheat bread if you're looking for a healthier meal. For the fresh bread crumbs, use 6 to 8 slices bread crumbled into tiny pieces.
INGREDIENTS:
1 carrot, grated
1/2 onion, chopped
2 cloves garlic, minced
1/2 cup chopped fresh parsley
2 pounds ground beef
1/2 cup ketchup
2 eggs
1 1/2 cups fresh bread crumbs
1 cup tomato sauce
1 teaspoon white sugar
DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).
In a medium saucepan over medium high heat, saute the carrot and onion for 2 minutes, or until onion is transparent. Add garlic and saute for 2 more minutes. Remove from heat and let cool.
In a large bowl, combine the parsley, beef, ketchup, 1/2 cup tomato sauce, bread and eggs, mixing well. Add the carrot/onion mixture and continue mixing, but do not over mix, as this will make the meatloaf dry. Transfer mixture to a 9x13 baking dish and form into a loaf.
Bake at 375 degrees F (190 degrees C) for 30 to 45 minutes.
While loaf is baking, heat the remaining tomato sauce and sugar in a medium saucepan over medium low heat. Pour over loaf when done.
