Answers:
I just make large batches of whatever I find in my healthy cookbooks. Then I put it in those individual size disposable gladware containers and stack them up in the freezer. I usually have a couple options in there to choose from. At work defrost in the micro for 2 min stir then cook until hot (3-5 min depending on micro). Fast, economical, and healthy. If you don't have cookbooks subscribe to Cooking Light magazine, or Light and Tasty magazine. Both are great resources. Cooking Light is a little fancier more gourmet recipes. Light and Tasty is good old down-home cookin', lighter!!!

What I do is I just make a larger salad for dinner and put the leftovers in tupperware and dressing in seperate tupperware so the lettuce doesnt get nasty. Its low fat and if you use real lettuce/salad, not bag salad, it keeps alot longer. You can also just add to the salad like coutons or tuna or something like that.
