I do a lot of lunches with couscous because you can vary the ingredients and have a different flavor every day. Here's a knock-off of tabouleh:
2 cups chicken broth
2 Tbsp olive oil, divided
1 cup couscous
1 cucumber, seeded and diced
2 small tomatoes, seeded and diced
1/3 cup each fresh parsley, cilantro, and mint, finely chopped
1 clove garlic, crushed or finely chopped
2 Tbsp fresh lemon juice

Bring the broth to a boil in a small saucepan with 1 Tbsp of the olive oil. Stir in couscous, cover. Turn off heat and let sit, covered for 5 minutes, fluff with a fork and pour into a large bowl. Add remaining ingredients and stir to combine. Chill before serving.

My other favorite cold prep for it is to make the couscous and mix it with roasted red peppers, basil, parsley, lemon, feta cheese, and black pepper.

For a hot variation, season the couscous with curry powder and add cooked shrimp and finely diced roasted veggies. You can use coconut milk for half of the cooking liquid if you wish, and add a little lime juice after cooking to liven it up. :)
Well, we kind of need to know what you've been eating, but let's see:
1)Tortilla shells and cheese, roll up tortilla with cheese inside and melt for 30sec. or 1min.
2)Hot dogs sliced up and mixed with a can of brown beans. Heat to your desired temperature.
3)Tuna& mayonaise on bread. A tuna sandwich!
4)Crackers with cheese melted over the top, you can add pepperoni too.
5)Make soup. There are so many soups you can make, even if you make the canned stuff. Like, take 1 small carrot chopped; add to boiling water or broth; add soup stock if you used water; add small amount of rice or noodles; when rice or noodles are done, soup is done. Add a few crackers and enjoy!
6)Make toast(yes, a breakfast food is okay) with butter, cinnamin sugar, and thinly sliced peaches on it.
I hope these little recipes helped you out. Bye-bye now!

My own recipes and classics.
try this:

take your favorite bagel (i recommend an everything or plain or egg) or some bakery-fresh bread that's hard, like sourdough, and slice it like you would to make a regular sandwich. put some olive oil (extra virgin olive oil is good too) in a pan and turn on the flame to high. sprinkle on top of the oil some salt, pepper, garlic powder, and red pepper flakes. when this is done, take your bread and place it in the pan, bottom side down. the interior of the bagel or bread should be on the surface of the pan. press down on the bread. if the oil is hot enough, you should hear some sizzling. use a fork to lift up the bread every minute or so to check the color. when it reaches desired crispyness, remove the bread from the pan. fill it with your favorite fillings and enjoy! when you get comfortable with this recipe, or you don't like what i suggested you put in the olive oil, try your own spice and flavor combinations. this has always been one of my favorite lunch foods, so i hope you enjoy it as much as i do. bon appetit!
