whats the best way to make black beans? i heard they are really good for you and went and bought some, now i just need to know hat is the best way to bake then and make them taste good.

Answers:
1 lb black beans, soaked
8 cup water
2 tablespoons salt
1 cup onion, chopped
1 cup green pepper, chopped
1 cup celery, chopped
1 cup carrots, chopped
8 tablespoons olive oil
6 garlic cloves
1 tablespoon cumin
4 teaspoons white vinegar
1 teaspoon soy sauce

Simmer beans in water till soft. Saute onions, pepper, celery & carrots in olive oil til the onions turn golden brown. Add garlic, cumin, vinegar & soy sauce. Cook, stirring for 3 minutes. Drain about 1/2 c water from beans and add it to the saute.

Cook over a low heat for 30 minutes.

Combine vegetables with beans.

Cook for another 30 minutes, adding more water if necessary.

Black Bean Dip:

1 can of black beans, some juice removed
4 to 5 tablespoons sour cream
1 tsp onion salt
1 tsp cumin
pinch of crushed red pepper
couple dashes of hot sauce depending how hot you want it.

Put everything in a food processor until smooth (you may have to add some more sour cream if it is too thick)

Chill and serve with pitas, chips, crackers.



Black Bean Chili and/or Nacho Topping

2 cans black beans with juice
1 can Ro-Tel (any flavor)
1/2 green pepper, diced
1/2 red pepper, diced (more of either of these if you want)
1/2 red onion, diced
1 jalopena, minced with seeds
salt
papper
cumin, paprika, chili powder, parsley eyeball it to taste.
2-3 garlic cloves
Olive Oil



Saute the onions, garlic, and peppers in Olive Oil for about 5-7 minutes. Add in the beans and rotel and the spices. Bring to a boil, then simmer for as long as you want...1 hour for chili consistancy, longer for a thick chili that goes great on nacho chips topped with cheese and nacho toppings.
