* 3/4 teaspoon salt
DIRECTIONS:
1. In large bowl, mix together eggs and sugar until smooth; puree peaches in blender or food processor and stir 5 cups of puree into egg mixture. Stir in cream, half-and-half, vanilla and salt and mix well.
2. Pour mixture into freezer canister of ice cream maker and freeze according to manufacturer's instructions.
Peach Clouds
INGREDIENTS:
* 6 egg whites
* 1/4 teaspoon salt
* 1/2 teaspoon cream of tartar
* 1 1/2 cups white sugar
* 1 teaspoon vanilla extract
* 6 fresh peaches - peeled, pitted and sliced
DIRECTIONS:
1. Preheat oven to 450 degrees F (230 degrees C).
2. Beat egg whites in clean, dry bowl with electric mixer for 2 minutes. Beat in salt and cream of tartar. Continue beating and pour in sugar, a few tablespoons at a time, until mixture is glossy and stiff peaks form. Fold in vanilla.
3. Place in greased pie plate or spoon or pipe onto parchment-lined baking sheets.
4. Place in preheated oven and turn oven off. Leave meringue in unopened oven 8 hours or overnight. To serve, place meringue on serving platter and arrange peaches on top.

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 10x10 inch baking dish.
2. Stir together peaches with cinnamon and 1 1/2 cups sugar. Set aside.
3. In a medium bowl, cream together shortening and 1 cup sugar. Mix in flour, baking powder and salt alternately with milk. Pour into prepared pan. Top with peach mixture. Drop butter in boiling water and pour all over peaches.
4. Bake in preheated oven 40 to 45 minutes, until golden brown.

1 tsp nutmeg
1/2 tsp salt
2 tbl butter softened
1 cup sugar
6 x peaches (to 8) peeled and sliced
1/2 cup brown sugar
1 tsp almond extract
1 cup boiling water
grated nutmeg
Method :
Preheat oven to 350 degrees. In a small bowl, combine the flour, baking powder, nutmeg and salt; set aside. In a large mixer bowl, cream the butter, add 1/2 cup of the granulated sugar, and blend well. Beat in the flour mixture. (Recipe can be prepared to this point up to a day ahead and refrigerated.)
Oil a 9 inch square baking pan (using a metal pan gives a better texture to this dessert) and place half the peaches on the bottom. Sprinkle half the flour mixture over the fruit. Add the rest of the peaches and then the rest of the flour mixture. In a small bowl, combine the remaining 1/2 cup of granulated sugar and brown sugar; sprinkle over all. Put the almond extract in a 1-cup measure and fill with boiling water. Pour over the top of the cobbler, but do not mix. Sprinkle with additional nutmeg and bake for 1 hour. Serve warm.

4. add 1 - 2 cups of milk (buttermilk, canned evap. milk, half n half, whole milk -- all of these will work well), and stir VERY GENTLY. You want a LUMPY batter.
5. pour the batter all over the peaches.
6. Bake at 375 for about an hour (you'll smell the goodness when it's about time to check it).
*** This procedure will work well with Apples & Cinnamon, Mangos, Apricots, Cherries, Blackberries, Blueberries......... sinfully delicious.
