I ordered 5 pounds of portabella mushrooms from Sysco today. Any good recipies out there??

I used to be head cook at at an Italian place, here's a few of the things I did with them.

Stuff them with a combination of: Bread crumbs, eggs, Asiago cheese, Sun Dried Tomatoes, and Sweet Italian Sausage Slices and whatever herbs and spices you want (I like sage and garlic and onion). Pre bake them. Wrap them individually in oven safe dishes, with garlic butter on the bottom of the dish and drizzled over the top. When someone orders one, throw it in the oven and serve it with a steak knife.

Or roast onions and garlic in foil in the oven, puree it with honey and mustard, and put it in a squeeze bottle, and chill it. Stem the shrooms and marinade them in italian dressing. When someone orders it, grill the shrooms on a charbroiler, and "dress the plate" with the sauce and some thinly slice red and yellow peppers.

Also use the marinated mushrooms as a combo with a grilled steak on an entree. Sautee onion slices with olive oil and garlic, drain the oil, add a dash of brown sugar and some balsamic vinegar and cook it down until it's a rich brown color. Serve the steak and the mushroom on a bed of the onions, it's really good.

Or, you can coarse slice the mushrooms, dip them in egg, and "bread" them with corn starch and fresh grated Parm/Romano/Asiago and fry them as a garnish or appetizer. Serve it with a sour cream, mascarpone, and gorganzola dipping sauce.

That's all I can remember right now. I didn't get into specific numbers and measurements, but, if you are a cook in the food service, your cooking on such a large scale that you know to just use your best judgement.
I substitute them as ground beef for awesome cheeseburgers!
Grill the caps, brushing with soy or teriyaki sauce. Place
on a really good quality bun, add fresh sliced red onion,
leaf lettuce, fresh tomatoes, cheese and mayonaise. Yum!
Grilled portabella-mushrooms
6 Portobello mushroom caps
3 ounces vegetable broth
2 limes -- juiced
1 clove garlic -- minced
1 small shallot -- minced
1 sprig rosemary -- chopped
1 teaspoon fresh parsley -- chopped
fresh ground pepper
3 tablespoons Miso
3 tablespoons balsamic vinegar
6 tablespoons water
2 pounds fresh spinach -- stems removed

Make marinade of vegetable broth, limes, garlic, shallot, fresh rosemary,and parsley Marinate Mushrooms at least one hour in the mixture grill or broil over high heat 4 minutes caps up. Turn and season the
mushrooms with pepper, Miso, vinegar,water mixture.
Broil till soft.Steam spinach in covered pot for 1 to 2 minutes or until just wilted.Spread spinach on serving plate arrange portobello mushrooms on top and serve.
EWWWWWWWW! I say open the package and then throw them in the trash! SORRY I just hate slimy ickey little mushrooms! EWWWWWWWWWW
