and I also take washed red potatoes put on 2 sheets of tinfoil, quarter onions, add minced garlic and a sprig of rosemary or a little dried, olive oil and a little butter, top with 2 more sheets of tinfoil and seal real well and either put in oven or cook on grill for about 45 mins...they are really good and easy to make....

I love redskin potatoes. That is all we have had lately and what I made with mine that the family really loved were a potato salad made with the skin still on, a seafood chowder made with skin still on as well as rosemary-garlic roasted potato slices made with the red skins still on.

I made the above meals the usual way, just that I used the redskin potatoes and left the skin on.

1 pound red potatos, skin on
1 8 ounce container sour cream
1/2 stick butter (optional)
fresh parsley and dill
salt and pepper

Boil potatos, return to pan with low heat to get off excess water, add herbs, sour cream and butter and mash chunky style. You could also add some feta or goat cheese to this....


boil them with skins on, then mash them. a little sour cream and dill with the salt, pepper, butter and milk will give it a little different taste. or boil or roast them with the skins on and do a potato salad--dice them, mix in sour cream, mayo too if you insist, salt, pepper, a small chopped up pickle, or some dill spice. CURRIED POTATOES

3 med. red skin potatoes, washed
2 carrots, cut in thin slices
3 c. water
1 tsp. salt
6 tsp. oil
1 med. onion, sliced
1 lg. apple, sliced
3 tbsp. flour
2 tsp. curry powder

Boil water and add potatoes, carrots, and salt. Cook about 15 minutes or until tender. Save liquid.
In a large skillet, add oil and fry onions. Add apples slices and cook slowly for about 10 minutes. Sprinkle flour and curry powder over onions and apples to dissolve. Slowly add liquid the vegetables were cooked in. Cook and stir until sauce thickens. Then add potatoes and carrots. Serve over hot rice or noodles.

Just wash your red potato's and trim off any bad spots. leave the skin on. cut them in small chuncks like you would for mashed potato's and boil them util they are soft. Then drain them and add salt and pepper about a cup of mayo and the secret ingredient......
SHREDDED PEPPER JACK CHEESE!! Shred a whole bar of pepper jack cheese and mix it in with your potato's and mayo. I mix it with a fork and not a regular potato masher because its better kinda lumpy.Its not too spicy like you would think, but it's REALLY REALLY good!
