Other than risotto being italian & paella spanish, what's the difference?

Risotto is an Italian side dish made with Arborio rice; a short grain (almost round) rice that cooks up creamy. The following is not a recipe - just a description of how a basic risotto is made: First, a minced shallot is sauteed in a bit of oil. Then the Arborio is added and gently sauteed. Next, a small amount of white wime is added and stirred until absorbed. The, about half the total amount of chicken stock used for the risotto is added. This is allowed to cook until completely absorbed. Then, more chicken stock is added, a half cup at a time, stirring all the while, until it is absorbed. One would continue adding stock and stirring until the risotto is al dente and creamy. Lastly, freshly grated Parmesan Reggiano is stirred in. Note: this is a basic risotto - other things can be added, such as vegetables,

Paella is a one dish rice meal, characterized by the inclusion of chicken. sausages, mussels and/or clams, shrimp, and sometimes lobster. Peas usually appear in Paella. The rice used is usually Valencia, but Arborio may also be used. Saffron gives paella it's distinctive color and flavor. (Please don't use tumeric as a substitute for saffron - it will give the dish the right color, but does not, by any stretch of the imagination, taste anything like the real deal!).

The method is a bit involved, but it tastes so yummy it's worthwhile (especially if you're trying to impress someone with your skills in the kitchen!). First, the chicken pieces are sauteed until browned. Those are removed and next the sausages are browned.Sausages are removed and it's time to saute the onions and garlic. Tomatoes are added and cooked a bit with the onions and garlic. Raw rice is added, along with chicken stock, saffron, wine, and salt. Sausages and chicken are returned to pot, pot is covered, and set in the oven for about 15 minutes. Then, the shrimp, mussels and/or clams, lobster pieces, and peas are added, the pot covered, and returned to the oven for another 10 to 12 minutes. Yummy!!

Risotto is more like a side dish while paella has all sorts of meats and vegetables mixed in to make it more like a main dish. Risoto is slowly cooked with broth over a low flame while Paella is baked with shellfish and sometimes eggs. Paella is also double cooked, first on the stovetop and then in the oven. Risoto is only done over a flame.

Risotto can also have a variety of other ingredients besides the rice, whereas paella usually has garlic sausage, chicken, shrimp, lobster and veggies.

Adriana is right with her answer: Paella is the name of a specific Spanish dish with specific ingredients. If you order "paella" from the menu in a restaurant, then you know exactly what you will be getting. Risotto, however, is just a general term for italian rice cooked slowly by the gradual addition of hot stock. It may have several added ingredients. This will usually be stated on the menu, e.g. "mushroom risotto" or "seafood risotto" etc.
