Creamy Jalapeno Dip (like Chuy's)
3 cups ranch dressing
1/4 cup roasted green chiles (I'm sure canned would be ok)
1/4 cup sliced jalape?os (from a can)
3 tablespoons fresh cilantro leaves
1/2 tomato, diced (preferably Roma)
Pulse all ingredients in a blender in batches until smooth. Chill and use as needed.
Makes about 4 cups

Well, green chiles and jalapenos are not necessarily the same thing. But if you want to roast jalapenos, first cut the tops off and core them to remove the seeds. Then put them on a pan in your oven at a fairly low temp, 300-325 and keep an eye on them. They should not turn black, but the skin will shrivel and they will lose their firmness. I actually usually do mine on the grill, for around 25 minutes. But the longer you roast them, the less heat they have. Roasting takes it right out, but the resulting change in flavor is really good. So you have to kind of play it by ear (or taste) and see what you like best. Your kitchen will get a nice aroma, but for me it's a good one. One caution: I have seared dried peppers in the house before, and the oils released from them permeated the whole first floor, giving my wife eye-watering and coughing fits. She had to leave the house until it cleared out. Roasting peppers will probably not have the same result, but if you find yourself or others in the house experiencing any similar problems, open up the house and sit outside for awhile!
If you are using some other kind of green chile pepper, adjust your time depending on the thickness of the pepper. Jalapenos tend to be a little thicker than some other varieties.

You can also..IF you have a gas stove...roast them directly on your cooktop...just be careful and dont burn them on the inside...just the skin should blacken a little bit..enough to slogh off after cooling..
BUT..why not just buy a can of Chipolte Chilis at a nice grocery store...those are smokes jalapenos in adobo sauce..VERY tasty..and nice flavors too..they would lend themselves well with your dip....just dont use too much..they go along way!! The discription above is very good - however if you want the taste without the smell & mess -- try Bueno Frozen Roasted Green Chili (either hot or mild) -- it is MUCH, MUCH better than canned!!
Second, I don't roast my Jalapenos -- just chop them up (remove the seeds if too hot for you). Green Chili's need to be roasted though. My mom them in a BBQ pit until they turn brown and then peel of the brown she makes these awesome green spicy enchiladas
