Stick to colors of the Italian flag. That should look nice.
Simple sprigs of oregano or basil leaves.
I would use something traditional, such as olive or grape vines. Orange yellow is usually a good base color as well
I save the very tops off my fresh basil and stick a pretty sprig in the middle of my pasta dishes. You can also decorate with olives scattered over the top, or with strips of roasted marinated red pepper in an attractive pattern of some kind. If I am serving pasta, I always hold back the premium ingredients, like prawns in seafood linguine, to display over the top with some chopped Italian parsley or basil over them.
Italian food is so colorful, don't be afraid to just rearrange your ingredients to make the most of the color palette in the dish.
