Delicious and very quick and easy to prepare.
Ingredients

* 3/4 cup oil-packed sun-dried tomato halves drained
* 1/4 cup loosely packed basil leaves
* 1 tbsp pine nuts
* 2 tablespoons preshredded fresh Parmesan cheese
* 1 tablespoon bottled minced garlic
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1/2 cup (2 ounces) crumbled feta cheese

Directions

1. Cook pasta according to the package directions, omitting salt and fat. Drain through a sieve over a bowl, reserving 1 cup cooking liquid. Return pasta to pan. While pasta cooks, place tomatoes and next 6 ingredients (through black pepper) in a food processor; process until finely chopped.
2. Combine tomato mixture and the reserved 1 cup cooking liquid, stirring with a whisk. Add to pasta; toss well to coat. Sprinkle with feta.
Goulash. My great-grandmother was from Poland and she would always fix it when we came to visit.

1 lb. ground beef or ground turkey.
1 med.onion
package of elbow macaroni.
ketchup
seasonings like paprika, ginger, cumin, mustard powder, Worcestershire.

brown meat and chopped onion in skillet, drain excess fat
boil noodles per package instructions.

after noodles are drained, dump browned meat mix into same pot as noodles. Add enough ketchup (or tomato sauce) to make a gooey consistency. Add seasonings to get a combination that tastes good to you. For best taste, don't forget salt and a teaspoon of brown sugar(cuts the acid in the tomato) Serve with rye breadsticks or homemade wheat rolls. Should take less than 35 minutes. Enjoy.
Easy Thai chicken curry

In a saucepot, place one onion, roughly chopped, one large sweet potato, peeled and cubed, and two boneless skinless chicken breasts, cut into strips. You can add more veggies if you'd like...red pepper and celery are good in it.

Add one can of coconut milk, 1 tbs brown sugar, and 1 c of water and a chicken boullion cube.

Bring to a boil and add 3tbs curry powder. Reduce to simmer and cook until potato is tender and chicken is done. Top with chopped cilantro and peanuts and serve over rice.
Gobi manchurian (cauliflower manchurian)

Cauliflower -1
Onions - 2-3 medium sized
Garlic -- 2-3 cloves
tomatoes or tomato paste (1 can)
vinegar -1tsp
Salt to taste
oil to fry
All purpose flower 2 cups

To make the batter: Mix the all purpose flour and water to make a watery paste.

Wash the cauliflower in warm water and dry them out. Dip in the batter and deep fry and keep aside. If you want you can pre cook the cauliflower if you don't like crunchy cauliflower.

Dice the onion and mince the garlic, Put a little bit of oil in a pan and fry them until they are brown. Add the tomato paste, vinegar,red chillie powder(how much you can take-your choice) and fried cauliflower and let it reduce.
Gobi manchurian is ready to be eaten.

If you like spices like basil, oregano or thyme you can add. If you like indian spices -- can add garam masala or curry powder. If you hate chillie powder avoid it...:))
Hope you enjoy making it.
Ratatoui. Saute garlic onions in olive oil, then add chopped zucchinis, eggplant, tomatoes, yellow squash, green pepper and tomato sauce, cook until soft. Herbs & seasonings to taste (I like lots of pepper and crushed red pepper). Parmesan cheese on top.
