Its EPA (Edible Portion Ammount) divided by the Yield equals the APA (As Purchased Ammount).
What you need, divided by the yield, equals what you need to buy.
There is a yield book, but I dont remember the name. Also the CIA has a culinary math book you can get at Barns & Nobels.
