Take the 2#s of asparagus and divide it by 56%. you get 1.12#s. Add this to the original 2#s to get 3.12#s total.

Its EPA (Edible Portion Ammount) divided by the Yield equals the APA (As Purchased Ammount).

What you need, divided by the yield, equals what you need to buy.

There is a yield book, but I dont remember the name. Also the CIA has a culinary math book you can get at Barns & Nobels.
