It depends on what kind of chocolate you mean. I have a jar of Nestle Toll House Cocoa (from which a person can make chocolate cake, chocolate frosting, brownies, hot cocoa, etc). I also have a jar of Chatfield's Cocoa Powder. Both are unsweetened, and the second one is alkaline free. Cocoa powder comes from Cocoa beans, and there is a varying amount of fat that comes along with the bean. Here is the legend from the Chatfield's jar: "Catherine Chatfield, the wife of Sir Byron Chatfield, was quite fond of high quality, premium chocolate. Upon his retirement from the distinguished Queen's Regiment and in an effort to please her, Sir Byron traveled the world searching for a cocoa powder befitting his wife's tastes. His journeys took him to the continent of Africa, known for its wonderful cacao beans. There on the Ivory Coast, he discovered a premium cocoa that quickly became her favorite."
3 level tablesppons + 1 tablespoon shortening or oil = 1 ounce (1 square) of Unsweetened Baking Chocolate.
By the way, I have read that 1 oz of dark dark chocolate (61% cocoa or more) is rich in antioxidants and something a woman (in particular) should have once a day. :)
