A Rich Pumpkin Smoothie (Vegan-Friendly)
7 ounces canned pumpkin puree
8 ounces apricots, chopped (either canned, fresh or frozen)
1/2 tablespoon sugar, to taste (or any sugar substitute)
1/2 cup soy milk
1 dash cinnamon
1 dash nutmeg
3/4 cup crushed ice
Combine all ingredients in blender and blend until smooth.
Spinach and Mushroom Tofu Quiche
1 unbaked 9-inch pie crust
1 lb spinach, chopped
1/2 lb mushrooms, sliced
1 tablespoon olive oil
1 onion, finely chopped
4 garlic cloves, minced
1 lb firm tofu, drained
1/2 cup soy milk
1/4 teaspoon Dijon mustard
3/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 teaspoon ground red pepper
black pepper
1 tablespoon dried parsley
Preheat oven to 400 degrees F. Bake pie crust in preheated oven for 10 to 12 minutes.
Place broccoli in a steamer over 1 inch of boiling water, and cover. Steam until tender but still firm, about 2 to 6 minutes. Drain.
Heat oil in a large skillet over medium-high heat. Saute onion, garlic and mushrooms until golden. Stir in the cooked spinach and heat through.
In a blender combine tofu, soy milk, mustard, salt, nutmeg, ground red pepper, black pepper, and parsley; process until smooth. In a large bowl combine tofu mixture with broccoli mixture. Pour into pie crust.
Bake in preheated oven for 35 to 40 minutes, or until quiche is set. Allow to stand for 5 minutes before cutting.
Healthy Vegan Chili
1/2 cup boiling water
1/2 cup textured vegetable protein
1 onion, chopped
1/2 green pepper, chopped
1/2 red pepper, chopped
1/2 yellow pepper, chopped
1/2 orange bell pepper, chopped
2 cloves garlic, minced
1/2 cup water or vegetable stock
1 (19 ounce) can mixed beans
1 (19 ounce) can kidney beans
2 (19 ounce) cans whole tomatoes, sliced,juice included
1 cup fresh corn or frozen corn
1 jalapeno pepper, sliced (optional)
1-2 teaspoon chili powder
1 1/2 teaspoons dried oregano
1 1/2 teaspoons ground cumin
salt
pepper
1/4 teaspoon cayenne (more for spicier beans)
Pour the boiling water over the TVP and let stand until softened.
Braise the onion, bell peppers and garlic in water until onion is clear, then add remaining ingredients, including TVP.
Simmer for at least 30 minutes.
Vegan Sloppy Joe
2 ounces tofu crumbles (I like Smart Menu "gimme lean")
2 tablespoons catsup
1 teaspoon mustard
1 teaspoon Worcestershire sauce
1 teaspoon vinegar
1 teaspoon brown sugar (or 1 packet Stevia sweetner)
1 dash salt
1 tablespoon chopped onions
Cook the crumbles in a skillet with the onion and the salt.
Combine the other ingredients in a microwave-safe bowl and nuke on high for 30-60 seconds.
Mix the crumbles and onion with the sauce.
Serve in a whole-wheat pita, on a tortilla, or whatever.
Raisin Bran Beverage
1 cup Raisin Bran cereal
8 ounces unsweetened applesauce
1/2 cup soy milk
1/4 teaspoon cinnamon
Put everything in the blender and blend to your desired smoothness.
Pour into a mug and microwave on high for 45-60 seconds.
Enjoy!

A friend taught me to grill a mixture of white potatoes, sweet potatoes, onions and green pepper. It is fantastic.
Steaming hot (cooked) rice and sambar with some pure ghee! Tastes best when you are hungry.
a patato throw in the fire and then put about 1/7 stick of butter on it. and generouslt apply salt and pepper... but come on steak is better.. i agree with Cronides |
