Grab a nice sharp knife and cut the peach from the top down until you hit the pit. then spin the peach parallel to the knife until it is in two pieces. (if you have ever sliced an avacado, i do it kinda the same way) take out the pit and slice into wedges like an apple or any other round fruit.

Get some boiling water and a bowl full of ice water. Drop them in the boiling water then immediately remove them to the ice water one at a time. This will make the peeling remove quickly by just sliding your hand over the peel. Obviously this saves time if you are peeling and slicing a lot of peaches. Wouldn't be practical for one peach. This also works to skin catfish.
