I'd like to be able quickly to put together a vegetarian (lacto-ovo) picnic that would be good for my husband and me and our two year old. Thanks.

Answers:
Peanut butter jelly sandwiches, homemade cookies (may be oatmeal and raisin), burgers with lightlife meatless deli for you both, some crackers/tortilla chips, few apples/bananas, fruit flavoured yogurt and some fruit/vegetable juice boxes and ofcourse, water as well.

Other Answers:
I would definitely include a fruit salad, it's yummy and cool on a hot day. A garden salad also.
make some good salsa, have totrilla chips, guac, and eggplant parmesan subs, also u could make portabellas on the grill, instead of hamburgers, use a pesto instead of mayo
Whole wheat pita bread with hummus, fruit salad, egg salad, raw veggies.
i am not sure, but maybe
1.peanut butter and jelly sandwiches
2.fresh fruit
3.cookies
And make sure not to forget plenty of napkins
