It seems tender enough but I would like to add extra flavour to it. If you have any other suggestions, let me know. We only eat fish and seafood and enjoy cheese but are otherwise vegetarian. Nothing really spicy, please.

Can you ask the meat eaters! We wouldn't have a clue here, a vegetarian doesn't eat anything with a face and sharks have a face. From that you can safely draw the conclusionthat we don't know about shark and would NEVER eat it. The omnivores live in the general food section. I hope you get some recipies from them!!
You're not vegetarian if you eat fish. Vegetarianism is the practice of not consuming meat, with or without the use of other animal derivatives, such as dairy products or eggs... but thats a different issue. I think the marinade sounds great!

Yes, you shouldn't have any trouble using a marinade like the one you've descibed.

Parsley would be a good addition to that mis as well.
