Certain foods dont get completely digested when they enter other certain parts of the digestive system. When your body cant digest something, bacteria usually go to it and the bacteria produce gases that contribute to flatulance (sp?) I think i read about this on wikipedia, but you have to take everything there with a grain of salt. If you do check it out, just search for farting. It will take you to the right info.
Here's a hint for you and I promise, they work.
Soak the beans prior to cooking for 3-4 hours or even over night. I soak them for about four hours and rinse them every hour or so then change the water before cooking them. It won't remove all of the gassy stuff in them, but it really does lessen it a lot!!
My Granny used to add a tablespoon of Ginger spice while she cooked them and it worked also.
I like beans too, but couldn't stand the gassy part of them. Then I discovered the soaking and Ginger tricks.
Maybe you just got older and there are less enzymes in your stomach that will digest them.
It takes time, but it gets better. It's your body readjusting to all that fiber mainly. Of course the beans themselves will always have a little gassy substance no matter how much fiber you get used to consuming. A prior post mentioned ginger, but I buy the fresh stuff and put a few thin slices to help it out. No ginger? then throw a large carrot in and let it cook for the last hour (ginger the whole time). Also, while cooking, you can drain and rinse the beans every hour (but then you'll need to add 2 extra hours onto the intial 2 hour cooking time).
your body has to re adjust. i've always found that bean-o doesn't fail me, not even up against onions and peppers!
