I agree with Rostov. I'm a new vegan girl - who recently found out her husband may have diabetes - so we are loving the fact that we're Punjabi. Punjabi food can be thought of as North Indian.
We're lucky in that we eat a lot of chick peas, "black chick peas" (check out the Indian store), kidney beans and lots of lentils...
I'd suggest getting a slow cooker - that seems the easiest way to make these (unless you want to use a pressure cooker - pressure cookers are used a lot in Punjabi cooking etc.).
Have fun! Oh yeah - and remember to always used the dry beans (they need to be soaked overnight in the fridge in a big dish of water). They have a much lower glycemic index (the glucose hits your bloodstream much more slowly) than canned beans.

My recommendation is get to know the Indian and Lebanese cultures very well.
Pasta dishes and curry dishes are very good. Invest in a vegetarian cookbook.

You can never go wrong with salad. I would suggest trying all kinds of different lettuce blends, dressings and toppings. I've found if you try a different combination of toppings, dressings and lettuce you never really get sick of salad cause you can make it different each time.
I have one from a Seventh Day Adventist cook book called Special K Roast...all of you can try it out!!!
1/2-1 large onion
3 pkg george washington broth or 3 bouillon cubes
1/4-1/2 cup melted margarine
1 (1-2 lb.) cottage cheese
2 1/2- 5 cup Special K cereal
1/4-1/2 cup nuts (optional)
3-6 eggs
Mix well. Bake 45 min -1 hour at 350 until nicely brown on top. make a small loaf or large (8 x 8 inch or 9 x 13 inch)
Easy to make and good too!!!

Ultimate Vegetarian Nachos
Ingredients:
baked tortilla chips, schreeded chedder cheese, refried beans for vegans, some salsa
I use all this stuff for toppings but you don't have to
chopped green onions, diced tomatoes, avocado or gaucamole, schreeded lettuce, and a lot of sour cream
Instructions:
1. Spread the chips out on plate or cookie sheet in as thin a layer and spread cheese on top along with a little of the refried beans.
2. Microwave for like about 30 secs OR bake in oven for about 10 minutes at 300 degrees or until cheese is melted completely and beans are warm.
3. Remove plate/sheet and add the rest of the toppings.
