The Ilocano way to cook vegetables.
Ingredients:
1/4 lb-pork sliced thinly, or
1/4 lb-shrimp
3 cloves-garlic
1 TBsp-shrimp paste
1-roma tomato, chopped
2 TBsp-soy sauce
1/4" piece-ginger, sliced thinly
1/3 cup-water
12-okra
The following vegtables, sliced thinly:
1/2-bitter melon
1/2-kalabasa
2-eggplants
several-long beans
Instructions:
Brown pork slices or peeled shrimp. After meat browns, start adding the vegeables, starting with the ones needing the longest cooking time (probably long beans or kalabasa). Constantly stir and saute as you are adding the vegetables. Add ginger and garlic and cook for just a few seconds, then add the tomatos, soy sauce and water. Cover and simmer for 6 minutes
Uncover and add the shrimp paste. Cook for another 6 minutes or until vegtables are thoroughly cooked.
Serves 4.
