Answer:
TOFU COTTAGE CHEESE
A combination of tofu, herbs, and barley turns into a vegan version of herbed cottage cheese.
Ingredients salt
water
1 pound firm or extra-firm tofu, drained and cubed
3 T olive oil
2 T lemon juice
1 clove garlic, minced
2 t mild barley miso
black pepper
1 T tarragon, chopped
1 T chives, chopped
Directions Bring water and salt to a simmer, add the tofu, and cook for 5 minutes. Remove from water and dry with paper towels. Transfer to medium bowl.
In the small bowl, whisk the oil, lemon juice, garlic, miso, ? t salt, and pepper. Pour over the tofu.
Preheat oven to 350.
Mash the tofu until liquid is completely absorbed and curds form. Stir in remaining ingredients, then transfer to baking dish.
Bake until tofu begins to brown, about 20 minutes.
Creamy Cottage Cheese
Ingredients (use vegan versions):
1/2 lb. extra-firm silken tofu
1/4 cup vegan mayonnaise
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dill weed or 2 tablespoon chopped chives (I prefer chopped chives)
Directions:
Place all ingredients in a large bowl. Stir together till well combined. Transfer to a storage container and chill in fridge. It will be fresh for about 5 days. This recipe is delicious. You will love it. Believe me.
Serves: 8-12

If you did, it wouldn't be cottage cheese, would it?
If you mash tofu with a fork it looks a bit like cottage cheese - doesn't taste anything like it though!
I just found this yesterday on aweb search, so I haven't tried it yet, but here goes.
Ingredients:
1 12oz. package firm tofu
1 cup okara
2 Tbsp. soy butter
Method:
Add tofu to food processor and pulse until the tofu is minced into tiny pieces resembling 'cottage cheese'. Remove from processor and add to okara and soy butter. Mix well. Refridgerate.
