As for the question, I would think just capsicums!
in the UK we call them peppers, much easier.
It's actually capsicum. Like sheep. The plural of sheep is sheep, and fish is fish, not fishes, though it's now an acceptable usage.
Capsicums is, also, not wrong because it's got the license of normal usage.
Do remember that Americans would understand bell pepper and bell peppers, rather than capsicum. Like cilantro rather than coriander and okra rather ladies fingers and egg plant rather aubergine or the Indian term - brinjal.
