Taverna Veggie Sandwiches
Ingredients
1 large eggplant, sliced lengthwise into 1/2-inch-thick pieces (4 to 8 slices total)
1/4 cup roasted garlic oil*
3 medium tomatoes, sliced in 1/2-inch-thick slices
4 large slices sourdough, Italian, or French bread, about 3/4 inch thick
2 tablespoons snipped fresh oregano
1/2 cup crumbled feta cheese (about 2 ounces)

Put it on some ciabatta or other crusty bread, top with roasted red peppers, some artichoke hearts and some sprouts (broccoli sprouts work good if you can find them.)

a nut of somekind (pick you favorite i really like walnuts or pine nuts for this sandwich)
any other vegetables or condiments you like to add to a salad.
1.take a spinach tortilla and place cut up lettuce on it, just do a stripe down the middle of the tortilla.
2.put on the rest of the stuff you like on a salad.
3. sprinkle nuts over it.
4 begin to fold tortilla.
5. fold bottom of lettuce stripe up abput an inch.
6.fold over right side of tortill until a small part of it folds over the corner of the first fold.
7. roll right side until all the way rolled up.
8.or yopu can just roll it up however you want it to but this is the best way to make sure nothing falls out.
9. if you are not vegan you can add diced hardbol=iled egg to the wrap.
and then the classic quesadilla:
tortilla
quesofresco cheese
1.sprinkle cheese over tortilla.
2. melt cheese on toritilla
also this isnt really a sand wich but it tastes so good it's just zuccini and provalone cheese melted over it, it is really tasty!

Good white brown what ever kind of bread, depending if you have teeth or not, banana and crisp any flavour but salt and vinegar may not be the best choice. Butter bread, slice banana add crisp you can even toast it if you are feeling really adventurous.
Assuming you eat eggs, you can make a Morningstar Farms fake bacon BLT with some avocado. Maybe even throw that bad boy on a croissant with lots of black pepper and mayo. If you don't do eggs, try it with cucumbers or something.
Vegetarian cheese with grated apple mmmm!! Turkey flavoured Quorn TM /other sliced meat substitute and stuffing, Hummus and salad. Pickle and salad, Tomato and herb pate. Coleslaw with peppers , paprika and a little chilli. I hope you like them!!!
I don't think it gets much better than avocado, lettuce, tomato, roasted pine nuts and lots of mayo...
I do a veg version of BLT's and substitute with Lightlife's Smart bacon. YUM!
Toasted bread with feta cheese and sweet chili sauce is delicious.
Cucumber, Cheddar and marmite on fresh granary bread. Vegan version use engivitta instead of cheese.
Beetroot and really strong Cheddar is pretty special too, though I've not found a vegan substitute for strong cheese.
