Tuscan Tomato Pasta
Prep Time
20 minutes
Ingredients
1/2cup chopped onion
2cloves garlic, minced
1tablespoon olive oil or vegetable oil
1cup sliced fresh mushrooms
1can (28 oz) whole tomatoes, cut up
1/2cup shredded carrot
2tablespoons red wine vinegar
1tablespoon dried basil leaves
1cup Morningstar Farms? Meal Starters? Chik'n Strips
8ounces spaghetti or fettuccine
2tablespoons shaved Parmesan cheese
(Morning Star products can be found in the freezer section and is 100% meat free)

There's lot of great recipes on the internet, try Epicurious.com, there's also some that specialize in veg meals. My favorites are the fish taco's and black bean soup.
There are a lot of recipies with tofu. Really anything you do with any kind of meat you can do with tofu.
there is no such thing as a wholesome vegetarian meal. btw, fish is meat.

If you choose to not eat certain things, that's your choice as a sentient being, but be aware that it's completely UNNATURAL.

One that I like is www.williamsandsonoma.com You enter the food ingredient you are working with, and it will give you several recipes for that item. There are many out there like this, in a search engine like yahoo, type in recipes vegetarian fish ...this will give you several options. You can copy the recipes to a folder on your hard drive or print them and create your own recipe book or folder.

Just to clarify.. if you eat fish, you are a pescatarian, not a vegetarian.
For wholesome meals, fill half your plate with veggies, 1/4 with grains (rice, potatoes, bread, pasta, quinoa, etc) and 1/4 with a protein food like beans, legumes, tofu, etc. This is just an approximation to give you an idea of what a balanced meal looks like.

Dag! What's with the anti-veggies up there? Take the carrots out your rears. We all know it's a choice and we all know we're ominvores . It's a deliberate moral and/or health decision.
That being said, I have found the best thing to do is just substitute meat wherever possible with its vegetarian equivalent like Morningstar Farms and Boca stuff...like tacos, sloppy joes or spaghetting sauce with Morningstar Farms crumbles. You still get the protein you need. There are substitutes for almost everything now.

My origin is India but I reside in US. We Indians cook 1000's of vegetarian meals which is as tasty as any meat based meal.
If you go online there are recipes but you need to put names for those. so I m going to put some vegetarian dishes name n you can get the recipe online.
The wholesome meal consists of bread, protein, vegetables, fiber... . You can add yogurt plain or flavored or Raita (Indian yogurt made with cucumber and tomatoes and cilentro).
for bread I would suggest you to pick any kind either Indian bread (which you get in Indian market) or tortialls, or wheat bread or 12 grain bread or whichever healthier one..
simple vegetable curries or dry fries with any kinda vegetables for example (cabbage, cauliflower, peas, potatoes, garbanzo beans, tomatoes).
you can put in as Chola recipe for garbanzo beans curry.
you can put Aloo mutter (for potatoes and peas gravy based vegetarian dish)
If you chose to go thai it has coconut milk based vegetarian curries.... or fish curries....

I am not a vegetarian but my 3 1/2 year old daughter is (she has done this herself..never liked any meat) i have been trying to learn new meals that are healthy without the meat for her. Tofu can be a GREAT substitute for meat in a lot of dishes. We did a fajita dinner with tofu in place of meat and it turned out sooo good. Red and Green peppers, onions and tofu..grilled with fajita seasonings..then i cooked up some beans, rice and topped it all off with some sour cream, gauc and cheese...it has tons of nutritional value..put it with corn or flour tortillas and its a great meal. Hope this helps (a lot of mexican recipes are easy to make vegetarian...easy to do is soft tacos with beans instead of meat OR fake meat from the healthfood store..some tastes better then others though so you'll prolly have to try a few before you find a good one...) Other then that...we do a salad with red peppers, slivered toasted almonds and cucumber you could top it off with grilled fish and then use an oriental dressing...mandarin oranges are really good on it to and its super healthy..
