I hope this awnswer is not too late .I would dilute some marmite with water
If you have some Marmite (sandwich spread)availabie .It is vegetairian and the taste would be similar to soy sauce .You can adjust the saltiness by adding more or less water.
Teryaki Sauce. Comes in a bottle like soy sauce.
teriyaki sauce, hoisin sauce, black bean sauce, chili garlic paste, oyster sauce
Sesame oil
You can get gluten free soy if that's the issue, or try this recipe.
4 tablespoons beef bouillon
4 teaspoons balsamic vinegar
2 teaspoons dark molasses
1/4 teaspoon ground ginger
1 pinch white pepper
1 pinch garlic powder
1 1/2 cups water
There is something called tamari that can be used instead of soy sauce.
Teriyaki sauce
Ponzu Sauce. It is like a citrusy soy sauce. I use it instead of soy almost all the time now!
Try Up Country Organics of Vermont's Mandarin Sesame Dressing. You can use it on tofu and/or veggies, and if you use it on seitan(wheat meat) you have an excellent veggie alternative to sesame chicken. It's great on tempeh, too.
Go to your local Asian grocery and wander around; if you can't read the labels there's usually someone around who can help. There are also flavoured soy sauces like mushroom, etc.
Tamari is the closest substitute, but not as salty as soy sauce.
Salt.
Most popular are teriyaki and Bragg's Liquid Aminos (health food sec.s/stores), but if it's just cuz you don't have it, try http://www.foodsubs.com/ , a "cook's thesaurus."
