I would like to start baking cakes for a living in a professional way (for weddings or special events) and decorating is fun and simple for me, but, i need real recipes (to be honest, not only the frosting... ) would you like to share with me some of your expertise?

The absolute best is Martha Stewart's recipe for butter-creme frosting. my mom makes cakes for all sorts of events, and it tastes incredible. Try to check her website, or one of her books. You won't be disappointed.

I use 1 stick butter, softened
1/2 cup crisco
1 teaspoon or a little more vanilla
1 box confectioners sugar
you can thin the icing with a little karo syrup.

I gave this recipe to a friend who makes a lot of cakes and she always gets rave reviews I got it from my baking class at college.

2 1/2 # butter
1 1/2 # Crisco
1/2 # Brite White swiss Alpine fudge base
Mix till creamy and smooth
3 # powdered sugar
1/4 oz. flavoring
(water) optional
Add and stir in first speed
Cream for 10-15 minutes in first speed
do not refrigerate
if you wanna learn recipes for frosting food network is fine, especially paula deen as someone already said. However, if you are serious about wanting to do it professionally, i'd consider taking some classes...it's not the best to go professional but i started with classes from michael's craft stores and learned a lot. Now I plan to go and take culinary classes in baking and pastry...I think if you are serious its fun to start out the way i did and then follow it up with the necessary classes....There is a lot more to learn then you might think....like that flower nail.....and how to use fondant.....
