Well, if you have a smoker and about 10 hours, that's the best way! But if you're like me, and you're inpatient, I do mine in the oven. Here's my recipe from my mother in law from Texas:
Get a flat cut brisket.
Use the broiler pan. Layer 2 heavy duty layers of foil. Make sure it overlaps a lot, so you have plenty to wrap up the meat. Slice 1 onion and a few cloves of garlic. Place on foil. Rinse off the brisket. Lay fat side down on top of the sliced onion and garlic. Completely cover with garlic and onion powder. Flip over and repeat. Slice more onion and lots of garlic on top. Make sure you get some slices of garlic in the juice as well. Place some celery stalks around the meat. Pour 1 can of Campbell’s consommé around the meat. Pour about ? - 1/3 bottle of Lea and Perrin’s around and on top of the meat. Add some water. Seal one layer at a time. Bake at 300 – 325 degrees for 4-5 hours. BBQ BRISKET
4-6 lb. brisket, trim off fat
2 tsp. liquid smoke
1 tsp. garlic powder
1 tsp. celery salt
1 tsp. onion salt
1/2 c. Worcestershire sauce
1 c. BBQ sauce
Salt & pepper to taste
Put brisket in container with lid. Sprinkle with liquid smoke, garlic powder, celery and onion salt, Worcestershire sauce and salt and pepper. Cover and let set overnight in refrigerator. Next day, drain off all liquid. Place in baking dish and cook 4 to 6 hours at 250 degrees. Cool, then slice. Place BBQ sauce on top right before serving and heat under slow heat about 1 hour.
