There are basically 3 types of pie doughs. The mealy will absorb the least amount of liquid, the short flake which is the most common, will absorb a slightly larger amount of liquid and the long flake which absorbs the most liquid.
They are all made with the same ingredients but, with the mealy dough you rub the shortening into the dough with your hands until all the shortening disappears. The short dough is prepared by cutting the shortening in with the pastry blender until you have pebbles and the long flake the flour and shortening are rubbed together to a lesser degree than with the other 2 types.

1 tsp. salt
1 1/4 cups shortening
5-6 Tbsp. cold water
You have to make it from scratch which is too lengthy to detail here. For one thing to get that oh so perfect crust takes practice. No you just have to do it a few time to get the feel of it so you can work quickly.
